Salem White is my first light fig of the season. It just beat the Italian Honey to ripening, which appear to be another couple of days away. It's probably a fluke since this is a first year tree that I started in the winter. This is only my second white fig ever, and the experience still mirrors the first (IH): pleasantly sweet, but kind of light tasting. Again, my wife liked the Salem White a lot more than I did. She ranked it a solid delicious, whereas I gave it an ok rating. So far the dark figs are smashing the light figs on my taste buds, but I still have Hollier, Smith and Stella coming to give the white figs some redemption this season.
