Yes it will ripen in zone eight. I got mine from someone in staton island and he has no problem ripening it. The fig has a large cavity. I have not tried it yet but people from what I see mostly stuff it or cook with it.

I don't remember its flavor, but it did well (in conatienr), in zone 6b. Gave the plant away 5-6 years ago.

Tried it some 7 or 8 yrs ago and it is too ordinary in taste for my zone in PNW. Gave it away.
